Out of the Box Jamabalaya

We don't have any CAJUN in our blood but we do have family that has moved to cajun country so we make this in honor of them.  Now, I have to admit that I don't make it "homemade".  It is the boxed version BUT I have learned enough from my mom that ANYTHING can be tweeked!  So here is my version called "Out of the Box Jamabalaya".  We had only 8 thumbs up for this one...Cricket doesn't like it cause it is too "spicy" even though there is very little spice in it.  But everyone else had 2 thumbs up!



What you need:

1 lb chicken breast cubed
1 package of smoked sausage (sliced longways then cut in bite size pieces)
1 can chicken broth
1 can tomato sauce
Box of Zatarains Jambalaya (best in my opinion)
1 cup of white Minute Rice (brown rice makes it too sticky)
1/2 onion chopped (sauteed if you don't like to have them crunchy)

In a large pot, put in the chicken broth (keep can) and tomato sauce and bring to a boil, throw in the chicken and sausage, boil til chicken is white. Put in box of jambalaya mix with the cup of Minute rice, onion and a can of water (can from chicken broth).  Bring to boil and stir good. Reduce heat to lowest setting and cover for 20 minutes then take off the burner to let cool off before serving (but not entirely).  **I buy the mild box of Jambalaya but you can get it in a hot or spicy.
