Zucchini Fries

I have discovered that we eat an awful lot potatoes so I have been trying to find recipes that are similar to something I would make with potatoes but made with something much healthier...ie french fries.  We love zucchini so this was a no brain-er when I found this recipe.  Super easy to make and they got ten thumbs up in our house.

Cut zucchini into fries-sized sticks.  Sprinkle the fries with 1 Tbs of salt and let sit in a colander.  This will help draw the liquid out of the zucchini.  Rinse them off and dry off.  Mix together 1 cup bread crumbs, 1/2 cup Parmesan cheese and 1 Tbs of Italian seasonings.

Dredge the zucchini in 2 whipped eggs then in the breading mixture.  Place them on a parchment paper lined cookie sheet.  Bake for 12-15 mins in 425 degrees.  This recipe was adapted from a Pinterest find found here.
