Mini Biscuit Pizzas

I was planning on having a veggie night for dinner and when I told my hubby that was on the menu, he started to sulk . . . literally.  He is a meat and potatoes kind of guy.  So I opened the fridge and stood there staring at it's contents.  When I noticed that I had 2 cans of biscuits, 1/2 a package of pepperoni and cheese.  AHA! Mini biscuit pizzas!  Then I ran to the pantry to make sure I had tomato paste and BINGO we have something that he will ok with.  Here is how I made them...

2 cans of biscuit that I flattened with my fingers then I smeared tomato paste on top.  Sprinkled them with italian seasoning, garlic powder and seasoned salt. Mounded on a pile of cheese next and then topped with a couple slices of pepperoni.  I baked them at 425 degrees for about 8 mins (I kept an eye on them so not really sure how long it actually took) and of course we dipped them in Ranch dressing.
